RECIPE KARE AYAM, SPICE CHICKEN WITH LEMONGRASS SAUCE

Ingredients

  • 1 chicken, cut up in pieces
  • 10 birdsey chillis
  • 3 red chillis
  • 7 sjalotes
  • 2 cloves garlic
  • 1 slice ginger, 1 inch thick
  • 1 slice kunyit (yellowroot), 1 inch thick
  • 1 slice galangal, 1 inch thick
  • 1 tsp gr. coriander
  • 1 tsp trassi (fermented shrimppaste)
  • 5 kemirinuts
  • 1 stalk lemongrass
  • 1 cup coconutmilk
  • 3 daun jeruk, lemon leaves
  • 1/2 tsp sugar
  • salt to taste

Preparation

Prepare bumbu in blender by adding chilis, sjalots, garlic, ginger, kunyit, galangal, kemirinuts and blending it until a paste forms.

Heat oil in wok and saute bumbu until golden. Add chicken and fry another 2 mins. Add coconutmilk, lemongrass and daun jeruk. Simmer for at least 20 mins and add sugar and salt to taste.

Serve as part of rijsttafel with some other dishes.
