RECIPE AYAM GORENG KERING DRY ROASTED CHICKEN WITH SPICY OIL

Dry-roasted chicken with Spicy oil

Ingredients

  • 4 chicken thighs
  • 4 cloves of garlic crushed
  • 4 pc staranys, bruised
  • 1/2 tsp cardamompowder
  • 1 cinamon stick
  • 2 tbsp sweet soysauce (ketjap manis)
  • 1 cup dry sherry (or mirin)
  • 1 cup water
  • salt and peper to taste
  • Pepery oil
  • 3 tbsp sesamyoil
  • 3 tbsp soyoil
  • 6 birdseye chilis
  • 1 clove of garlic, crushed
  • 1 tsp ground szechuan peper

Preparation

Mix ingredients for chicken and let it marinate for about 2 hours. Put the chicken in a hot oven (225 C/ 450 F) in a covered ovendish for about 45 mins. Take out of the oven and pat dry. Then put on a roasting rack back in the oven until the skin is nice and crisp.

The oil
Heat the oils and add the chopped chilis, garlic and peper in there and heat on low fire untill it becomes fragrant.

Drizzle some of the oil on the chicken.
