RECIPE AYAM OPOR PANGGANG CHICKEN IN COCONUTMILK

Roasted chicken in a mild coconutmilksauce

Ingredients

  • 1 chicken, about 2 pounds
  • 1 stalk of lemongrass
  • 3 salam leaves
  • 3 cups of coconutmilk
  • salt to taste
  • Herb mixture (boemboe)
  • 7 sjalots
  • 3 cloves of garlic
  • 1 slice of ginger (1 in.)
  • 1 slice of kunyit (0,8 in.)
  • 1 slice of galangal (1 in.)
  • 3 tsp ground koriander
  • 1 tsp gr. cumin
  • 7 kemirinuts
  • 1 tsp sugar
  • salt to taste
  • 5 tbsp veg. oil

Preparation

Clean the chicken. Smash the bottom of the lemongrass.

Clean everything for the herbmixture and grind it in a mortar/blender.

Fry the mixturen in the oil, about 3 mins. Add the chicken, lemongrass, salamleaves and fry another 5 mins.

Add coconutmilk and salt to taste and simmer for about 30 mins until the chicken is done.

Take out of pan and cool. Roast on bbq until crisp.
