Simmered chicken

Ingredients

  • 1 chicken, about 2 pounds
  • 1 stalk of lemongrass
  • oil
  • 3 salam leaves
  • 1 cup coconut milk
  • 1 tbsp palmsugar
  • Herbmixture (boemboe)
  • 5 sjalots
  • 3 cloves of garlic
  • 1 pc kunyit, 2 inch
  • 1 pc galangal, 1 inch
  • 1 tbsp ground koriander
  • salt to taste

Preparation

Cut up chicken.

Clean up everything for the boemboe.

Smash up the bottom of the lemongrass.

Fry the boemboe in some oil with the lemongrass and salam leaves, about 3 mins. Add chicken pieces and fry another 3 mins. Add coconutmilk and palmsugar. Leave to simmer until liquid is evaporated.

Fry the pcs of chicken in hot oil.

Filet the chicken and serve.
