RECIPE CHICKEN WITH SPICED COCONUTMILK

Ingredients

  • 1 chicken, 3 pounds
  • 5 sjalots
  • 3 cloves of garlic
  • 5 birdseye chilis
  • 1 pce kunyit, 1 inch
  • 1 pce galangal, 2 inch
  • 1 pce kencur, 1 inch
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 9 kemirinuts
  • 1 stalk lemongrass, bottom smashed
  • 3 tbsp vegetable oil
  • 3 salam leaves
  • 3 cups coconutmilk
  • 1 tbsp palmsugar
  • salt to taste

Preparation

Cut up chicken.

Clean, peal, chop sjalots, garlic, kencur, kunyit, kencur, kemirinuts, chilis. Grind to a paste.

Fry paste until fragrant. Add lemongrass, salam leaves and chicken. Fry for about 2 mins, add sugar, coconutmilk and salt to taste. Leave to simmer for about 45 mins.
