RECIPE AFRICAN SPARERIBS WITH PEANUTSAUCE

Meat dishes from Sourth Africa for 4 persons

Ingredients

  • About 2 pnds spareribs
  • 3 tbsp oil
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 2 cups chickenstock
  • 1 tbsp ground coriander/cilantro
  • salt and pepper to taste
  • tabasco to taste
  • about 1/2 pound peanuts, unsalted
  • 1 eggplant
  • juice of 1/2 lemon
  • 2 tsp paprika

Preparation

Heat oil in large pan, pan fry ribs, until they're golden, if needed in 2 batches. Take out of pan.

Saute onion and garlic for a few minutes, add stock and ground coriander and add salt, pepper and tabasco to taste. Bring to a simmer and add ribs, leave for about an hour until the meat comes from the bone! Take out ribs and keep warm.

Puree peanuts in blender or something, add some oil. Cut up eggplant in cubes.

Mix ground peanuts with stock and stir until its a smooth mixture, add eggplant, lemonjuice and paprika. Add salt and pepper to taste. Leave to simmer for about 15 mins.

Serve with french bread or rice.
