RECIPE POTATO CHILI

Recipe for a full meal chili dish with pork and potatoes.

Meat dishes from Mexico for 4 persons

Ingredients

  • 2 pnds pork chops, bone removed, cubed
  • 2 tbsp flour
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1 red chili, minced
  • 1 tbsp corn starch
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 pnd potatoes, pealed and cubed
  • 3 large tomatoes, chopped
  • 6 oz chorizo, cubed
  • 3 stalks celery, chopped
  • 3 tbsp oliveoil
  • 2 cups beef stock
  • 1 bayleaf

Preparation

Shakek meat and flour together. Combine starch, chili powder, cumin and oregano.

Heat 2 tbsp oliveoil in large pan. Brown meat on high heat and take out. Add the rest of the oil and add onions, garlic, chili and saute for 2 minutes. Put meat back in pan and saute another 10 minutes. Deglaze pan with stokc and bring to a simmer. Add bayleaf and put on lid, let simmer for 20 minutes. Add potatoes and simmer for another 15 minutes, then add tomatoes and chorizo and simmer for 5 minutes.

Add 2 tbsp cold water to starch mixture and thicken chili with this.

Serve with cornbread.
