RECIPE PORKFILLET WITH LEMON TARRAGON DRESSING

Recipe for pork with a fresh tangy lemon tarragon dressing.

Ingredients

  • 6 porkfillet slices, halved
  • 4 tbsp oliveoil
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 1 tsp tarragon
  • 1 tsp balsamic vinegar
  • salt and pepper

Preparation

Heat 1 1/2 tbsp oliveoil and saute pork for about 4 minutes, turn halfway.

Mix 2 tbsp water with lemonzest, tarragon, vinegar, shallot, garlic, salt and pepper and the rest of the oil.

To serve divide pork over 4 plates and drizzle sauce around meat. Serve with green beans and rice.
