RECIPE PORK ROAST WITH SAGE

Recipe for a large pork roast with ribs, ideal for a large group like with christmas.

Ingredients

  • 1 Pork Roast with 5-6 ribs
  • 25 sage leaves
  • salt and pepper to taste
  • 2-3 tbsp oliveoil
  • 12 cloves garlic, unpealed
  • 1 1/2 - 2 kg. potatoes, skinned, in rough chunks
  • Oventray and tin foil.

Preparation

Ask the butcher to prepare the meat so it can be cut in slices easily after cooking and the ribs are 'clean', like a lambrack.

Roll sage through a salt and pepper mixture and roll up.

With a sharp nice make small incisions to insert sage leaves.

Preheat oven to 210C/420F. Rub meat with oil and sprinkle with salt and pepper. Cover ribs with tin foil.

Pour 1/2 cup of water in oven tray and arange pork in the middle. After 20 minutes add garlic and roast another 75-90 minutes. Regularly baste with liquid from tray. About 30 mins. before the end arrange potatoes in tray, when done take out potatoes and pork and leave to rest. Put the tray on high heat and add 1/2 cup of water and scrape tasty bits from bottom, mash garlic in sauce, and slightly reduce sauce and strain.

To serve slice meat, arrange on plate with potatoes and drizzle with sauce.
