RECIPE SWEET SOY PORK

Typical Indonesian dish, recip use pork and sweet soy (Ketjap Manis).

Ingredients

  • 1 pnd pork, little fatty
  • 7 sjalots
  • 4 cloves garlic
  • 3 pcs ginger, about 3/4 inch each
  • 3 red chilis
  • 2 tbsp oil
  • 4 tbsp sweet soy (ketjap manis)
  • 2 tbsp salty soy (ketjap asin) not japanese soy!
  • 1 tsp ground black pepper

Preparation

Cut the meat in slightly bigger then bitesize pieces.

Pound sjalots, garlic, ginger, chilis in a mortar to a paste, this is a boemboe.

Heat oil in wok and fry boemboe in oil for about 2 mins. Add meat too and fry until slightly colored. Add both soy, and 2 cups of water. Bring to a simmer and leave to simmer for at least 20 mins but preferably longer. Add more water if needed. When ready, take of lid and reduce sauce.

Serve with rice and a vegetable dish.
