RECIPE SPICY STIRFRIED (BEEF SAMBAL GORENG DAGING)

Recipe for spicy beef, stirfried with garlic and chilis.

Ingredients

  • 1/2 pnd beef, best you can afford, thinly sliced
  • 5 shallots, chopped
  • 3 cloves garlic, grated
  • 3 red chilis, chopped
  • 5 birdseye chilis, choppped
  • 1 pce ginger, about 1"
  • 1 stalk lemongrass, bruised and cleaned
  • 1 tomato, seeded and skinned
  • 3 spring onions, chopped
  • 1/2 tsp ground coriander seeds
  • 1/4 tsp ground cumin
  • 1/2 tsp trassi (shrimppaste)
  • 1 tsp salt
  • 1 tsp tamarinde
  • 5 tbsp oil

Preparation

Prepare boemboe by pounding ginger, garlic, shallot, chilis together to a paste, add gr. coriander, trassi, tamarinde and salt.

Stir fry beef on high heat in oil, take out, add boemboe with tomato, spring onion and lemongrass and warm through. Add beef and toss to coat.

Serve with rice as part of a rijsttafel :-)
