RECIPE SPICY PORK BABI RICA

Meat dishes from Indonesia for 4 persons

Ingredients

  • 1 pnd pork, a little fatty cubed
  • 10 sjalots
  • 7 chilis
  • 15 birdseye chilis
  • 1 tomato, skinned
  • 2 slices ginger, 1 inch thick
  • 2 lemongrass stalks
  • 5 tbsp oil
  • 7 lemon leaves
  • 1 tsp sugar
  • salt or bouillon cube to taste

Preparation

Pound sjalots, chilis and tomato to a paste in a mortar.

Clean lemongrass and crush the bottom part.

Heat oil in a pan and fry paste for a few minutes, add meat, lemon leaves, ginger and lemongrass.

Let simmer for at least 15 minutes, but preferably longer for enhanced flavour.

Serve as part of a rijsttafel (various indonesian dishes).
