RECIPE SALAD WITH GUINEA FOWL AND SESAMEDRESSING

This recipe has guinea fowl which can be subsitituted with skinned chickenbreast.

Salad dishes from Thailand for 4 persons, suitable for for christmas and other holidays.

Ingredients

  • 1 mango, skinned and sliced in strips
  • 2 small ripe tomatoes, skinned, seeded in strips
  • 1 sundried tomato, in oil, in strips
  • 1 sprig cilantro, coriander, chopped
  • 2 guinea fowl filets, with skin
  • 1 tbsp oliveoil
  • freshly ground pepper
  • 1 bunch arugula
  • 1 tbsp sesameoil
  • 1 tbsp limejuice
  • 1 tbsp soy
  • 3 tbsp sweet white wine

Preparation

Grill guinea until done and slice in strips.

Divide arugula over 4 plates, divide mango, cilantro and tomato over them.

To prepare dressing, warm sesameoil and sundried tomato, stir in lime, soy and wine and bring to a simmer. Take of heat and let cool.

Divide guinea fowl over plates and drizzle salad with dressing.

Serve with crusty bread.
