RECIPE SALAD OF SHRIMP WITH FETA

Try this recipe with shrimp and feta, you can use a variation in shrimp and cheese.

Salad dishes from France for 4 persons, suitable for for christmas and other holidays.

Ingredients

  • 1/2 pnd little pink shrimp
  • 2 grapefruits, cut in skinless segments (save juice)
  • 1/4 pnd feta, cubed
  • 4 little eggs
  • 8 tbsp oliveoil
  • 1 egg yolk
  • 2 tbsp white wine vinegar
  • 1 tbsp yoghurt
  • chives
  • mixed lettuce for 4
  • pepper and salt to taste

Preparation

Divide lettuce over plates, add shrimp to plates with feta and grapefruit segments.

Prepare dressing by mixing oil, yolk, vinegar, yoghurt and 2 tbsp juice. Mix well and season with salt and pepper. Drizzle dressing over lettuce.

Pan fry eggs and arange on plate.

Sprinkle with chives and serve with bread.
