RECIPE JOE PESCIS CHICKEN WITH SAGE AND GARLIC

Poultry dishes from Italy for 4 persons, suitable for on or with a bbq dish, for christmas and other holidays.

Ingredients

  • 4 chickenbreast, with skin
  • 2 tbsp oil
  • 16 cloves garlic, blanched and sliced
  • 4 tbsp unsalted butter
  • 1 tsp fresh sage, minced
  • juice of 1 1/2 lemon
  • 1 tsp chopped italian parsly (flatleaf)/oregano

Preparation

Preheat oven to 225C/380F. Sprinkle chicken with salt and pepper.

Heat oil in large pan, saute chicken skin side down and sear, turn over and brown on both sides. Leave until done in the oven.

In a sauce pan heat butter, sage and garlic. Add salt and pepper to taste. Serve with chicken and potatoes.
