RECIPE GARLIC ARTICHOKE PASTA

Recipe for artichoke hearts with pasta and garlic, great combination!

Ingredients

  • 1 bulb garlic, roasted
  • 2 tbsp oliveoil
  • 1 small onioni, chopped
  • 6 pomodori tomatos, pealed, seeded and chopped
  • 6 oz. artichoke hearts, chopped
  • 1 tbsp fresh thyme
  • 1/2 cup vegetable stock
  • 1/2 pnd pasta, cooked, preferably spaghetti or fettucini
  • fresh grated parmesan, optional

Preparation

Mash roasted garlic cloves and mix well.

Saute onion in 2 tbsp oil for about 3 mins, add tomato artichokes and thyme and saute for another 5 minutes. Add stock and bring to a simmer, then reduce heat and if needed thicken. Add pasta and toss well.

Then add roasted garlic spread and mix well. If needed add some salt and pepper to taste.

Sprinkle with grated parmesan if you like.
