RECIPE TUNA SALAD

Recipe for a healthy tuna salad, not the sandwich kind but the Nicoise kind.

Ingredients

  • 1/3 can tuna (on water)
  • 1 head butter lettuce
  • 1 shallot, minced
  • 1 large tomato, cubed, skinned and seeded
  • 1 1/2 tbsp dill pickle, chopped
  • 1 clove garlic, minced
  • oil and vinegar
  • salt and pepper

Preparation

Make dressing by whisking 1/2 tbsp oil with salt, pepper, vinegar and garlic.

Rip lettuce to bitesize pieces and layer a small bowl with lettuce. Layer bitesize pieces of tuna on lettuce and garnish with tomato, pickle and shallot.

Drizzle with dressing and serve.
