RECIPE MING CHICKEN SALAD

Recipe for Chicken Salad from Ming Restaurant.

Ingredients

  • 1 pnd chicken breast, sliced
  • Marinade
  • 2 tbsp sherry
  • 2 tbsp oil
  • 2 tbsp chopped cilanro
  • 1 tbsp hoisin sauce
  • 1 tbsp grated ginger
  • 1 tsp sesame oil
  • 1 tbsp mustard powder
  • salt to taste
  • 1/2 cup chopped peanuts
  • 3 tbsp sesame seeds
  • 2 cups rice noodles, deepfried
  • 2 cups thinly sliced lettuce
  • 2 spring onions, chopped
  • 3 tbsp chopped cilantro

Preparation

Prepare marinade by mixing all ingredients, marinate chicken for about 2 hours.

Roast chicken pieces in oven (200C/400F) for about 10 minutes or until done. Just before done drizzle some leftover marinade over chicken. Leave to cool. In backing dish add mustard powder and mix well with chicken. Add other ingredients and toss to coat.

Serve after a hot summer day, outside in the cool air.
