RECIPE CAJUN CHICKEN SALAD

Cajun recipe, best if the chicken is grilled on the bbq.

Ingredients

  • 1/4 pnd chickenbreast
  • cajun spices (mix of garlic-, onionpowder, paprika, cayenne, black pepper and salt)
  • 1/2 pnd mixed lettuce
  • 1/2 tomato or 4 cherry tomatoes
  • 1/4 red bell pepper, in strips
  • 1/4 yellow bell pepper, in strips
  • some olives
  • Cajun dressing
  • 1 tsp garlic, minced
  • 1/4 cup mayonaise
  • 1/3 cup white wine vinegar
  • 1/2 tsp lemon juice
  • 1/2 tsp tabasco
  • 1 tbsp honey

Preparation

Rub chicken with spices. Grill each side about 3 minutes until done. Leave to cool and slice in thin strips.

For the dressing mix all ingredients well and leave in the fridge for a few hours.

Arrange lettuce over plate with peppers, tomatoes and olives. Finally arrange chicken on top.

Serve with the dressing on the side.
