RECIPE ASPARAGUS SALAD WITH POTATOS

Recipe for a salad with white and green asparagus with potatoes.

Ingredients

  • 100 grams green asparagus
  • 200 grams white asparagus
  • 1/2 pnd small potatos, pealed, boiled
  • 100 grams snow peas, blanched
  • 3 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tsp herb mustard
  • 1 shallot minced
  • salt, epper to taste
  • 2 tbsp fresh herbs (parsley, chives, chervil, etc.) chopped

Preparation

Steam or blanche asparagus until done, let cool and slice diagonally in bite size pieces.

Prepare dressing well ahead, mix all well and let stand.

Mix all ingredients well and toss with dressing, let stand for at least 30 minutes.
