RECIPE AIOLI 1

Recipe for the best garlic sauce, Aioli, this is one of many variants.

Sauces and dressings from France , suitable for on or with a bbq dish.

Ingredients

  • For about 2 1/2 cups
  • 4-6 cloves, garlic, minced (more if you like)
  • pinch of salt or to taste
  • 3 egg yolks of fresh eggs
  • 2 1/2 cups olive oil
  • lemon juice to taste
  • little bit of water/cream to make sauce thinner

Preparation

Prepare in blender or use whisk in big bowl. Mash garlic to a paste, then stir in egg yolks and some lemon juice then start whisking and add oil drop by drop until sauce comes together and thickens (this does take a while by hand!), in blender it comes together quicker. Add the rest of the oil.

For variations you can add fresh herbs, almond shavings, cayenne, etc.
