RECIPE VEGETABLES IN COCONUTMILK

Sajoer Lodeh, vegetables in a mild coconutsauce

Vegetable dishes from Indonesia for 4 persons

Ingredients

  • 1 pnd mix 'hard' vegetables (green beans, carrot, cabbage)
  • 1/4 pnd bambooshoots
  • 10 shallots
  • 2 cloves garlic
  • 1 chili
  • 1 tsp trassi (shrimppaste)
  • 5 kemirienuts
  • 1 tsp sugar
  • 1 coconut (or get about 2 cups of canned coconutmilk)
  • 3 tbsp oil
  • 3 salam leaves (indonesian bay leaf)
  • 2 slices galangal (1 inch thick)
  • salt to taste

Preparation

Clean vegetables and cut to bitsize pieces.

Make a paste of the shallots, garlic, chili, trassi, kemirinuts and sugar.

Grate coconut and soak grate in water to get coconutmilk, about 2 cups is needed.

Fry paste in some oil and add salam and galangal and the vegetables and coconutmilk. Bring to taste with salt.

Leave to simmer until done.
