RECIPE ORIENTAL COD PARCEL

Recipe for an oriental package flavoured with soy, cilantro and lime.

Seafood dishes from China for 4 persons, suitable for on or with a bbq dish.

Ingredients

  • 2-3 paksoy, only the leaves
  • 1/2 bunch cilantro, chopped roughly
  • 1 lime, squeezed and zested
  • 1/4 pnd beansprouts
  • 1 pnd fresh cod, in 4 pcs
  • 1 green chili, chopped
  • salt, pepper to taste
  • 2 tbsp soy
  • 4 pcs baking paper or tin foil

Preparation

Preheat oven to 200C/400F. Divide paksoy with zest over paper. Arange fish on top, sprinkle with chili, salt and pepper and soy, also sprinkle with a little lime juice. Close parcels and roast in oven for about 10 minutes.

Serve with rice.

To prepare on bbq use tin foil and roast on bbq with the lid on.
