RECIPE GREEN AND RED CURRY PASTE

Sauces and dressings from Thailand

Ingredients

  • Green Curry Paste
  • 10 green chilis (prik chee fa)
  • 5 green birdseye chilis (prik khee noo)
  • 25 gr. chopped cilantro root
  • 8 cloves garlic
  • 4 tbsp chopped sjalots
  • 4 tbps chopped lemongrass
  • 1 tsp laos/galangal powder
  • 1 tsp cumin
  • 1 tsp shrimppaste
  • Red Curry Paste
  • 3 tbsp chopped onion
  • 8 cloves garlic
  • 10 dried chilis
  • 4 thin slices galangal/laos
  • 2 tbsp chopped lemongrass
  • 1 tbsp chopped cilantro root
  • 1/2 tsp cumin
  • 1 tsp shrimppaste
  • 1 tsp salt
  • 3 tsp oil

Preparation

For each curry paste mix ingriedients well and pound to a pasta in a mortar or use blender or something.

Use in curry dishes and bring to taste when using in those recipes.
