RECIPE CHICKENBREAST WITH OLIVE THYME VINAIGRETTE

Ingredients

  • 4 large black olives, seeded
  • 1 clove garlic, minced
  • 1 tsp dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 1/2 tsp fresh thyme, chopped
  • 3 tbsp oliveoil + some extra to rub chicken and bellpepper
  • 1 tomato, seeded and skinned
  • 1 tbsp water
  • 2 chickenbreasts
  • 1 red bell pepper, quartered
  • 3 ounces arugula
  • 1 small endivy, chopped roughly

Preparation

In blender mix olives, garlic, mustard, vinegar and 1/2 tsp thyme, tomato and water, blend to puree with 3 tbsp oil. Bring to taste with salt and pepper.

Rub chicken and bellpepper with oil and season with salt and pepper and thyme. Grill over bbq or grillpan, slice thinly and keep separate.

Divide arugula and endivy over 2 plates and arange chicken and pepper on leaves. Drizzle with dressing and serve with some good bread or nice potatos.
